Remember these beautiful eggplant ???? I turned them into this fantastic eggplant Parmesan tonight for supper. It was really delicious and not difficult to do. I served it on a bed of fettuccine with English peas on the side. Hubby enjoyed it, and the girls even said it tasted good!!!!
