For lunch yesterday I made some of these yummy croutons to top my Caesar salad. They are really easy and taste fantastic!
Get the recipe HERE from Savory Sweet Life. I leave out the salt, because the garlic powder gives enough flavor for me. They tasted a bit strong with the salt added. In the above photo there is 3 tablespoons of olive oil, 1 teaspoon of parsley, and 1 teaspoon of garlic powder.
Throw in the cubed bread. I've used white bread, wheat bread, with, or without crusts and they're all good.
They're really yummy to snack on when they're half cooked- a little crunchy on the outside but still chewy on the inside.
Hello lunch.
I've made these a few times and only burnt them once so far, which is more than I can say for the fried okra I made the children for lunch.

Eggplant Parmesan
Remember these beautiful eggplant ???? I turned them into this fantastic eggplant Parmesan tonight for supper. It was really delicious and not difficult to do. I served it on a bed of fettuccine with English peas on the side. Hubby enjoyed it, and the girls even said it tasted good!!!!
This is where I got the recipe. Try it, you'll like it.
Yum.

Independence Day Bread
When life brings you zucchini, make zucchini bread. Well, a dear friend and neighbor brought over a bag of zucchini and eggplant last night and my husband's first statement was "you should make zucchini bread." He grew up loving it, so last year I got the recipe from his mom and made several loaves. While looking for that recipe I found one I had ripped out of Parents Magazine last May. This one includes blueberries too, which I also have in the refrigerator, so I decide to try it. Because I take after my mother, I cannot follow a recipe exactly. There must be some substitutions, so I'll give you the recipe first, and then what I did.
Blueberry Zucchini Bread ~ those gorgeous berries make the zucchini way less noticeable ~ as stated by Parents Magazine, and yes so true. It is very good bread.
